Chocolate Chip Loaf Cake

Leif's grandmother made a date nut loaf cake once, and 4-year-old Leif commented that it would be better with chocolate. This is the recipe she ended up with.


3 cupsflour
1 tspsalt
2 cupsdates
2 tspbaking soda
2 cupsboiling water
½ cupshortening
1 ½ cupssugar
2 tspvanilla
2 cupschocolate chips


Mix flour and salt, set aside. Cut up dates and sprinkle with baking soda, cover with water; set aside. In mixing bowl cream shortening and sugar together. Add eggs one at a time and then date mixture a little at a time alternating with flour mixture. Add vanilla and chocolate chips. Pour into greased pan and bake at 350°F until done (a little less than an hour, maybe an hour).

This one tastes even better after being frozen.
